365 Day Meal plan: February 18th Menu {with linky}

I’ve been dealing with some general fatigue for the last few weeks, so while I had my physical my doctor tested me for a variety of issues. Like last year my blood test came back that I was low on Vitamin D. Apparently it is VERY common and can cause things like fatigue, lack of mental clarity, aches and pains, and other symptoms. While I encourage you to get tested even if you aren’t low I’d recommend taking Vitamin D. I’m shocked by how much it made an impact as soon as I started.

So for now I’m keeping our menu plan super simple and repetitive so I can focus on resting up and finding some energy again.

Meal Plan: Week of February 18th

Monday: Takeout. Since our new dishwasher (SQUEE!) is arriving on Tuesday morning I don’t want to spend all night doing dishes before it arrives.

Tuesday: Taco night.

Recipes: Taco beef recipe, Easy Guacamole Recipe.

Simple Guacamole Recipe

Wednesday: Gluten-free pancakes, fruit salad, and sausage.

Recipes: Organic pancake recipe.

Thursday: Perfect chicken, copycat Chiptole rice (excited to try this), peppers and onions, salad (with this copycat recipe of Chipotle’s dressing)

Recipes: Perfect Chicken Breastscopycat Chiptole rice, copycat Chipotle dressing.

Friday: Homemade pizzas, salad, and garlic bread.

Recipes: Homemade pizza doughgluten-free pizza.

Saturday: Clean out the fridge night.

Sunday: Appetizer night! Lots of finger foods, dipping sauces, and yummy stuff.

Last Week’s Recap

Monday:Pancakes and fruit salad.

Always a crowd pleaser, I made gluten free pancakes this week, and no one knew the difference.

Tuesday: Chicken wings, roasted potatoes, a large salad, and cornbread. (I’m still trying to find the perfect recipe, do you have a favorite?)

I moved this meal to Sunday night. Instead we had takeout from Five Guys-a gift to me from me on Valentine’s Day. :)

Wednesday: Taco night!

Easy and fun!

Thursday: Perfect chicken breasts, caesar salad, garlic bread, gluten-free pasta with choice of toppings.

I skipped the caesar since we didn’t have the ingredients on hand.

Friday: Homemade pizzas, salad, and garlic bread.

We mixed it up and had the gluten-free pizzas as well as some other sides and some leftovers.

Saturday: Clean out the fridge night.
I was scrapping the bottom of the fridge here, but we made it work.

Sunday: Broiled fish (maybe key west style?), rice, salad, and fruit salad.

We had wings, homemade fries, and salad instead. YUM.

    I’ve had low Vitamin D the past few winters, and it makes a huge difference to take the supplements. My Seasonal Affect wasn’t bad at all this year, for the first time!

    Make sure you get your thyroid checked, too. That’s common for women our age, particularly after multiple pregnancies.
