March 25th Menu Plan: 365 Days of Meals

Last week was the first week of Spring, and the last cold of Winter for our family…or was it the first cold of Spring? Anyway, two of the kids came down with it, but seemed to recover after a day off school each. I got it too but I haven’t kicked it yet.  I still have a cough, so a lot of meals have been adjusted last week, and I suspect this week we’ll do a lot of ‘eat whatever you can find’ meals since it’s also Spring Break later this week. No one wants the cook coughing all over their food.

Of course, that’s what works with the meal plan. I can adjust it since we have plenty of menu ideas ready to go, or my husband or kids can pitch in.

March 18th Meal Recap

This is last week’s meal recap where I share what went right, and what went wrong. ;)

Monday:  Hamburgers, hot dogs,  homemade french fries, and salad.

The kids all gobble this one up. There was a mishap with some  caramelized  onions I spent Sunday evening working on. Let’s just say no one wants floor on their burgers.

Tuesday:  It’s my husband’s birthday, so I’m planning to cook up his favorite dinner (TBD). For birthday ‘cake’ we’re making cinnamon rolls instead. :)

It’s our family’s tradition to let the birthday person pick the meals, so Bob picked muffins for breakfast (Emma and I had Udi’s gluten-free cinnamon rolls instead). For dinner we picked up pizza from a local Italian restaurant that has gluten-free and regular options. We opted for ice cream for dessert. I begged out of making cinnamon rolls since both Emma and I were under the weather, but candles in ice cream works just as well. ;)

Wednesday:  Taco night!

I opted to give everyone leftovers since I was feeling worse.

Thursday:  Perfect chicken, cornbread, salad, and fresh fruit salad.

I pulled taco night together instead.

Friday:  Homemade pizza and gluten-free pizza, garlic bread, and a side salad.

We had company over and since I still had a hacking cough I put out some snacks, and picked up some food to go as well.

Saturday:  Clean out the fridge night

Pizza anyone?

Sunday:  Brinner: Gluten-free pancakes, fruit salad, sausage, and bacon.

I made hamburgers instead, and put out a variety of things we still needed to eat up including yes, more pizza. ;)

What’s on your menu this week?
