365 Day Meal plan: February 25th Menu

Another week, another meal plan! I’ve noticed our grocery spending creeping up the last two weeks since we’ve run out of some staples. I typically buy more every few weeks, but it seems the kids are eating more and more all the time, so I upped my budget by $25/week. Do you find your grocery budget fluctuates?

Meal Plan: Week of February 25th

Monday: Perfect chicken, mashed potatoes, salad (with this copycat recipe of Chipotle’s dressing)

Recipes:  Perfect Chicken Breasts, and copycat  Chipotle dressing.

Tuesday: Taco night.

Recipes: Taco beef recipe, Easy Guacamole Recipe.

Simple Guacamole Recipe

Wednesday: Gluten-free pancakes, fruit salad, and sausage.

Recipes: Organic pancake recipe.

Thursday: Gluten-free ‘fried’ chicken legs, cornbread, salad, and fresh fruit salad.

Friday: Homemade pizzas, salad, and garlic bread.

Recipes:  Homemade pizza dough,  gluten-free pizza.

Saturday: Clean out the fridge night.

Sunday: Baked tilapia, cilantro-lime rice, salad with apples and berries.

Last Week’s Recap

Monday: Takeout. Since our new dishwasher (SQUEE!) is arriving on Tuesday morning I don’t want to spend all night doing dishes before it arrives.

I love a good takeout night! And yay for the new dishwasher! I’m in love with it.

Tuesday: Taco night.

I pre-made my guacamole and store it in the freezer which makes taco night even tastier!

Wednesday: Gluten-free pancakes, fruit salad, and sausage.

Despite the fact that not everyone in the house is gluten free we’ve been doing a trial of gluten free for my oldest girl so we made it easier on her (and me) and made these for everyone. They taste nearly identical to our regular ‘cakes.

Thursday: Perfect chicken, copycat Chiptole rice (excited to try this), peppers and onions, salad (with this copycat recipe of Chipotle’s dressing)

Instead I opted for leftovers, since I had a busy, busy week.

Friday: Homemade pizzas, salad, and garlic bread.

We had homemade pizza, make your own sundaes, and popcorn for a fun little night in with the fam.

Saturday: Clean out the fridge night.

Leftovers are ALWAYS a good thing.

Sunday:Appetizer night! Lots of finger foods, dipping sauces, and yummy stuff.

I also made some gluten free pasta in case the finger foods weren’t enough, but everyone got a little of everything, so it worked out well.

      Yes! Lately we’ve been using Wegman’s all purpose baking mix. It’s perfect for this! Though I leave out the baking powder since it already has it in it.
