365 Day Meal Plan:: Week Eight Menu Plan

This week’s update on the yearly meal plan may look like a failure, but I still consider it a success since we didn’t eat out unintentionally. I still managed to serve the kids healthy meals (and so many fruits and veggies), and didn’t overspend on my groceries.


Here’s how last week’s meal plan kind of fell by the wayside:

Week Seven Menu Plan: Week of February 20th

Monday: Rosemary Roast, green beans, strawberry and spinach salad

This is such an easy recipe, and makes for a delicious and hearty meal on a cold night.

Tuesday: Bone-in chicken breasts, twice baked potatoes, salad with pears and cranberries.

Chicken breasts were out of stock at the store, so we switched Thursday night’s meal to tonight. ‘Fried’ Chicken Legs, roasted potatoes, green beans, spinach salad

 

Wednesday: “Mix Night” nacho chips, tacos, tortillas, taco beef, leftover chicken, and lots of sides {Chicken Taco Recipe}

We ended up having brinner (breakfast for dinner) gluten-free waffles, bacon (yum!), and fruit salad.

Thursday: ’Fried’ Chicken Legs, mashed potatoes, green beans, spinach salad

We had this for Tuesday’s meal, and went out to eat to celebrate after some good news.

Friday: Pizza night

Since we had pizza while we were out the night before this turned into leftover night, with some kids getting pizza, some leftover roast, and a big salad for me.

Saturday: Clean out the Fridge Night

We ate at different times this evening, so everyone had a hodge podge of stuff leftover in the fridge.

Sunday: Cider glazed pork loin, sweet potatoes, spinach salad

I had salmon that needed to be prepared, but not everyone loves salmon, so I also made hamburgers. (I know, weird!) Everyone had to eat some of the salmon, though. It is ‘brain food’ after all. ;)

Week Eight Meal Plan: Week of February 27th

Monday: Bone-in chicken breasts, rice, buttered green beans, cornbread

Tuesday: Brinner- gluten-free pancakes or waffles, bacon (drool), fruit salad, smoothies

Wednesday: “Mix Night” nacho chips, tacos, tortillas, taco beef, leftover chicken, and lots of sides.

Thursday: Rosemary Roast, roasted potatoes, salad

Friday: Make your own pizzas, side of salad (if you aren’t gluten-free try out our Whalen family pizza dough recipe)

Saturday: Clean out the fridge night

Sunday: Roasted chicken, rice, broccoli
