365 Day Meal Plan: Week 18 Menu

This week was super busy finishing up our master bedroom remodel (photos and posts coming soon) which included turning off the electricity. That meant meals had to be simplified, and fast. This week is another busy week with every night but Friday packed with after school activities so I’m making my meal plan so simple since I’ll be lacking time.

Week 17 Meal Recap

Monday: Simple Roasted Chicken Breasts, broccoli, gluten-free pasta (with cheese), side of olives, greek inspired salad.

So yummy. I love a good Greek inspired meal.

Tuesday: Burgers and hot dogs, super fries , salad.

Since the power was off for an hour during the time I normally make dinner, we just reheated the leftover chicken. Anyone that didn’t want chicken got a sandwich.

Wednesday: Brinner aka breakfast for dinner. We’ll be having gluten free pancakes, fruit smoothies, bacon, sausage, and oatmeal. Of course there will be a side of coffee too. ;)

We used the ground beef for taco night instead since it’s faster and simpler.

Thursday: Cider glazed pork loin, buttered green beans, spinach salad, fresh sliced apples.

This moved to Saturday night.

Friday: Make your own pizzas with Udi’s gluten-free pizza crusts and a side of salad.

My husband and I ate pizzas, but the kids had ‘fun night’ at our gym so they had sandwiches and fruit.

Saturday: Clean out the fridge night.

We has brown sugar/apple pork chops, and cleaned out the fridge as well.

Sunday: Since I’ll be running a race this day, I’ll let my hubby take over meal planning since I’m sure I’ll be passed out on the couch by the end of the day.

I opted not to run my race (more on that later), so instead we the kids had prepared chicken nuggets from the depths of the freezer because I had a last minute work project pop up.

Week 18 Meal Plan: Week of May 7th

Monday: Hot dogs and hamburgers, super fries, and salad.

Tuesday: Gluten-free pasta, broccoli, garlic bread, cheese & sauce, salad

Wednesday: Taco Night with my taco meat recipe

Thursday: Cider glazed pork loin, gluten-free corn bread, salad, honey glazed carrots

Friday: Pizza night, garlic bread, salad

Saturday: Clean out the fridge night

Sunday: It’s Mother’s Day so I’m not cooking. ;)
