It’s meal planning time again, and even though it’s a holiday it’s not a fun one where we make a feast or get a day off from work (though my kids are home from school). Although maybe we should make a new holiday menu for Columbus Day. Not sure what that would include though. Maybe Indian food since Columbus thought he was in India? Or Caribbean cuisine for the place he landed (The West Indies)? Or we might consider a Native American feast like Thanksgiving to honor the indigenous people who were here before Columbus came?

In any case we’re all a little under the weather, so it’s likely we won’t make a new Columbus Day tradition this year and this week’s menu plan is sure to reflect our typical Fall cold menu. Lots of simple meals that are good for congested people.

Last Week’s Recap

Most of last week’s meals were simplified as well since I had a lot of work and errands on my plate, site issues, and kids and a husband that were sick. Then over the weekend we attended Digital Family Summit in Baltimore so Friday, Saturday, and Sunday’s meals were all part of the conference package. Anything I bought that we bought but didn’t cook got frozen, so we didn’t worry about wasting groceries.

Meal Plan for October 14th


365 day meal plan

Monday: Chicken vegetable soup, and sandwiches. Nothing is better in the Fall (and for a stuffy nose) than soup. The sandwiches are for the picky people who don’t eat soup. (I know!)

Tuesday: Oatmeal, organic toaster waffles, and fruit salad (with loads of vitamin C containing fruits) and plenty of hot tea.

Wednesday: Hoping we’ll all be better I’m planning taco night. If we’re still under the weather more soup and oatmeal may be in order.

Recipes: Taco beef recipe, Easy Guacamole Recipe.

Thursday: Barbecue chicken legs, homemade fries, and salad.

Recipes: BBQ chicken wings recipe (instead used on the chicken legs),homemade french fries.

Friday: Pizza night!

Recipes: Homemade pizza dough.

Saturday: Clean out the fridge night.

Sunday: Rosemary roast, mashed sweet potatoes, green beans, salad, and cornbread.
