Guys, I can’t even. It’s supposed to be 61 today and snow on Friday. What’s up with that? The weather really messes with me every year when it switches from cold to warmer. I’ve been down with a nasty cold most of the last week as have most of the family! We did a lot of scrounging for dinner since both my husband and I were sick at the same time (I hate when that happens!), but thankfully I long ago embraced the idea that it’s okay to eat leftovers or cereal for dinner. Here’s hoping this week is a little kinder.
Monday: Wings
Honey BBQ chicken wings, french fries, spinach salad.
Tuesday: St. Patrick’s Day Feast
My husband is 100% Irish, so the kids really embrace the idea that St. Patrick’s Day is a holiday that’s a part of our family tradition. We aren’t big fans of traditional corned beed and cabbage, so I did some searching and found the idea of a Ploughman’s Lunch Platter-basically salad and other veggies, sliced meats and cheeses, pickles, and soda bread. Sounds like a perfect meal to me!
Wednesday: Taco Night
Taco night is always a favorite. I’ll make my taco beef and we’ll serve it with all our favorite sides-salsa, shredded cheddar cheese (dairy-free for me), shredded lettuce, and my easy guacamole.
Thursday: Birthday Dinner
We’ll be celebrating my husband’s birthday on Thursday. Not sure what he’ll request, but it most likely will start with a P and end with a ZA. 😉
Friday: Brinner
Pancakes, sausage, and fruit smoothies.
Saturday: Clean out the Fridge Night
Each week we reserve a day to ‘clean out the fridge’ to help reduce our food waste and eat up leftovers. It’s always a hodge podge of food, but it’s kind of fun.
Sunday:Hamburgers
Stuffed hamburgers, roasted potatoes, salad, and asparagus.
