This week I’m back to cooking. My husband is ‘off’ for the week. Rude. 😉 I’m actually looking forward to it, but don’t tell him that!

Monday: Fish
We’re big fans of this miso marinated fish recipe. We make it with salmon. So yummy. Sides of a giant green salad and a fruit salad are a perfect compliment.
Tuesday: Taco Night
We haven’t had taco night in awhile, so I’m excited to have taco Tuesday. I’ll serve up my easy guacamole and tons of veggies to top our tacos.
Wednesday: Stir Fry Night
Stir fry night is my favorite! We get to choose what goes in our custom-made stir fry, and I always choose ALL the veggies. Snow peas, broccoli, carrots, onions, and more. The must-have? A sprinkling of ginger and garlic. YUM.
Thursday: Slow-cooked chicken
Roasted chicken is fine, but making pulled chicken is easy and takes no time to set up in the slow cooker. A side of gluten-free, dairy-free cornbread and a big green salad with apples and walnuts will make this a perfect meal for a busy Thursday night.
Friday: Pizzas
Pizzas are so much fun to make at home. We’ve been trying out different gluten-free doughs and the jury is still out, but you can always try our Whalen Family pizza dough recipe if you’re not gluten-free and want to experiment. The base of it is pretty simple no matter what type of flour you use.
Saturday: Clean out the fridge night
We’ll work on cleaning out the fridge of all the leftovers and foods that need to be eaten up before they go bad. It’s a great way to reduce waste. Read about how we reduce food waste at home here.
Sunday: Waffles
Waffles and bacon for brinner dinner! 🙂
