May Meal Plan: Week Two

We have a busy week ahead. I mean, when do we not, but this week seems extra busy. We’ve got practices, and meetings, and appointments on the plan along with a practice 5k run for the two younger kids. Additionally we’re working on our backyard at every chance we can, so having a meal plan is crucial this week.

This week we added a hand written calendar and schedule to the fridge for the kids since they’re always individually asking what’s for dinner. It’s always one by one, too. It would crack me up if it didn’t happen EVERY day.

I also included activities for the day and after-school snacks since they have this annoying habit of eating up everything in sight in 3 days. We figured a scheduled snack means we’ll actually still have popcorn at the end of the week. I even put the weather on it so they know what to wear. It feels very Martha Stewart.

In any case, let’s jump into this week’s plan. Since most evenings include an activity either after-school or at 7pm we had to focus on quickish meals.

Monday: Fish
We need more fish in our diet. Omega 3s for the win! Bob found this Miso marinated fish recipe so we’ll be noshing on that night along with a green salad and watermelon.

Tuesday: Ribs
Ribs are on the menu this week! Bob picked some up at the local farmer’s market and has plans to do…something with them. Any recommendations?

Wednesday: Waffles
Waffles AKA brinner AKA breakfast for dinner is on the menu tonight. A side of bacon (yum), a healthy strawberry smoothie, and a fruit salad will round out our dinner.

Thursday: Cracklin’ Chicken
It’s been awhile since we’ve had this newer family favorite. It’s a great chicken dish. Served with a side of potatoes or even french fries and a huge salad it’s a hearty and delicious dinner.

Friday: Pizzas
Pizzas are on the menu for Friday night. We’ll make gluten-free English muffin pizzas. They’re easy to make, yummy, and make a great end of the week treat. Served with a green salad from our local farmer’s market we’ll be sure to have fuel for a fun Friday night.

Saturday: Clean out the fridge night
We’ll work on cleaning out the fridge of all the leftovers and foods that need to be eaten up before they go bad. It’s a great way to reduce waste. Read about how we reduce food waste at home here.

Sunday: Steaks
Steaks cooked on high heat with a balsamic glaze are a real treat and easy to make. Add a side of sweet potato fries and a green salad and you have a great meal in the making.
