Last week was tough. My site’s server went down, and it took a few days to get everything back in place. My husband finished a huge project at work, and prepped for an overseas trip. But that’s all small potatoes compared to the families who are grieving in Colorado right now. My heart aches for everyone who was affected by this tragedy. It’s hard to look at Monday morning the same way now, but I’m trying to move forward knowing that living my life to the fullest is the best way to honor those who lost their lives. I think my friend Emily (who lives in Colorado) said it better than I ever could, read her post on Aurora that includes links with more information as well as ways you can help.
Here’s a recap of last week’s menu plan, and this week’s menu.
Monday: Broiled salmon, rice, butter lettuce salad, applesauce.
I switched Monday and Tuesday because Tuesday night was going to be busier. So chicken, green beans, roasted potatoes, and salad made for a yummy meal.
Tuesday: Lemon chicken breasts (bone-in), green beans, roasted red potatoes.
I cooked salmon this evening, and also served leftover chicken. (not everyone is a fan of fish it seems) I picked up the salmon from Whole Foods and it was delicious!
Wednesday: Hamburgers, super fries, side of salad and smoothies.
Always a crowd pleaser (except for my burger hating 8 year old), but we skipped the fries since our potatoes weren’t
Thursday: Brinner! Pancakes, oatmeal, tons of toppings, bacon, and fruit salad. YUM.
We celebrated the end of a big project my husband was working on at work (4 years in the making!) with pizza for dinner.
Friday: Pizza night for the kids, date night for us.
We ate out at my favorite restaurant for a pre-birthday meal (Season 52) where I had a delicious grouper dish, and a lovely cocktail. We snuck in some shopping, and then headed home around 10pm. We’re totally reckless that way. 😉
Saturday: My birthday! Planning to make appetizer night for the kids and I and watch a movie. (my husband will be away on business)
We feasted on taco night since the fridge was looking kinda barren. Made special by making myself some delicious guacamole (recipe to follow), and buying my favorite cheese (Cabot’s ‘Seriously Sharp’). It’s the little things, people.
Sunday: Clean out the fridge night
The kids had sandwiches, veggies with hummus, and fruit. I had an indulgent plate of brie, turkey, almond crackers, a plum and some fresh cherry tomatoes. YUM.
Week 29 Meal Plan: Week of July 23rd
Monday: Roasted Lemon chicken (bone-in), roasted potatoes, broccoli, salad, and fruit salad.
Tuesday: Hamburgers and hot dogs with all the toppings, yogurt, and a big salad.
Wednesday: Taco night with my taco meat recipe.
Friday: The best flank steak, super fries, and a salad.
Saturday: Clean out the fridge night
Sunday: Garlic shrimp, garlic bread, gluten free pasta, and a huge fresh salad.
