Last week was a busy week with lots to do every evening, and a lot of work on my plate. Coupled with all the kids being home and no scheduled activities and I tried to balance meal planning, errands, work, and doing something with the kids each day. Thankfully it all worked his week, somehow.
Monday: Sandwiches (choice of PB, PBJ, ham or turkey), potato chips, sliced veggies, and fruit salad.
I love this. Made our night easy, and gave me time to take the kids to the pool.
Tuesday: Taco night! (see my taco beef recipe here)
I switched up taco night and pasta night because I hadn’t had time to go shopping yet! The pasta meal was easy and quick.
Wednesday: Gluten-free pasta, sauce & cheese, steamed broccoli, salad, and garlic bread.
Switched taco night to tonight and picked up taco ingredients while we were out running errands. Everyone loves taco night. For me, it’s nice to be greeted at the table with smiles and cheers.
Thursday: Roasted chicken breasts, summer salad, watermelon, and roasted potatoes.
We switched pizza night to tonight since I still hadn’t gone grocery shopping all week! We bought takeout pizza, and paired it with a salad.
Friday: Pizza night!
Roasted chicken was served this evening, along with a salad, and fresh corn on the cob. Yummy!
Saturday: Clean out the fridge night.
The kids had a sitter, so they ate strawberries, chicken fingers (pre packaged from Wegman’s), and salad.
Sunday: Hamburgers and hot dogs, super fries, fruit salad, salad with fresh veggies.
Always a summertime favorite.
Week 33 Menu Plan: Week of August 20th
Monday: Perfect roast chicken breasts, rice, salad, and corn on the cob. Watermelon for dessert.
Tuesday & Wednesday: I’m headed to New York City Wednesday evening through Thursday, so leaving some options for the hubby to make.
- Brinner (breakfast + dinner). Pancakes, fruit, and smoothies.
- Sandwiches, salad, and fresh fruit.
Thursday: Taco night! (taco meat recipe)
Friday: Pizza night! Homemade pizza recipe: for the kids and hubby. Udi’s gluten-free crust, and toppings for me.
Saturday: Clean out the fridge night. Using up all the leftovers and stuff that may go bad!
Sunday: The night before back to school! I’m going to let the kids choose their favorite dishes.
