I can hardly believe the last week is over. It was a busy one to say the least, and topped off with a sibling showdown at a robotics competition between my 10 and 14 year olds. (more on that to come)
We managed to make it through the week, but we ended up spending the weekend at my parent’s house since it was closer to our event so I got off the hook for Friday-Sunday meals. (thanks, Mom!)
Here’s a recap of last week.
Monday: Brinner. Mom’s pancakes, fresh apple slices, cider, bacon, and sausage.
Audrey made pancakes for the whole family. It’s my goal to get them all cooking a meal before too long even if I have to play assistant.
Tuesday: Tacos with my taco meat recipe and all the fixin’s. Perfect for a busy afternoon. I’ll be hosting a twitter party for eBay Mobile so I know I’ll be short on time.
Everyone loves this meal, and it helped that it was fast because we had a LOT going on that evening.
Wednesday: Spaghetti and meatballs. The kids want to get more into cooking so I’m going to have Emma make meatballs. We’ll serve it with a side of salad, and garlic bread.
Emma made meatballs with a made up recipe, and they were surprisingly yummy.
Thursday: Hot dogs and hamburgers, super fries, and salad.
We had games that got moved up this evening due to the sun setting earlier, so we ended up making sandwiches for dinner. There was no time to cook!
Friday: Pizza night!
Saturday: Takeout-we’ll be at a robotics event.
Sunday: Perfect roast chicken, butternut squash soup, mashed potatoes, green beans, salad.
Friday-Sunday we ate at my Mom’s house. Nana had some delicious grilled pork we ate Friday night, mix night on Saturday and hot dogs and hamburgers for Sunday. I’m grateful she likes cooking for a crowd. 😉
Week 40 Menu Plan: Week of October 8th
This week is another full schedule of robotics, field hockey, soccer, after school activities, and back to school night. Meals need to continue to be simple and easy to prep and cleanup since we have a limited amount of time to get a healthy meal on the table and everyone fed in a reasonable amount of time.
Monday: Brinner. Always a fan favorite, and I promise cross my heart that I’ll share my recipe soon. The kids tend to eat them up before I get a chance to get photos!
Tuesday: Tacos with my taco meat recipe and all the fixin’s.
Wednesday: Roasted chicken legs, mashed potatoes, salad, and homemade corn muffins. (gluten and dairy free)
Thursday: Pizza night! This night will prove to be challenging so I’m planning to get pizza on the table around 4pm so we can eat before a hectic night of activities.
Friday: Perfect roast chicken, green beans, squash soup, and a side of salad.
Saturday: Clean out the fridge night.
Sunday: Steak, super fries, and salad.
