This week’s meal plan is kind of a repeat. I was sick ALL last week, and while I’m finally feeling mostly human again (yay!), this week will look very similar to last week’s menu. I figured there’s no use reinventing the wheel since we mostly survived on cereal and toast last week.

Meal Plan February 11th
Monday:Pancakes and fruit salad.
Recipes: Organic pancake recipe.
Tuesday: Chicken wings, roasted potatoes, a large salad, and cornbread. (I’m still trying to find the perfect recipe, do you have a favorite?)
Wednesday: Taco night!
Thursday: Perfect chicken breasts, caesar salad, garlic bread, gluten-free pasta with choice of toppings.
Recipes: Perfect Chicken Breasts
Friday: Homemade pizzas, salad, and garlic bread.
Saturday: Clean out the fridge night.
Sunday: Broiled fish (maybe key west style?), rice, salad, and fruit salad.
This week’s lunch will be mini egg bakes. I love that I can make them early in the week and they stay good all week long.
Monday-Friday: We had a lot of hodge podge meals, and I made dinner once or twice, but mostly it was a blur of trying to get enough on the table that the kids wouldn’t starve before curling up on the couch again. My 8 year-old made pancakes one night though-everything from making the batter to cooking them up! It was so sweet, and a huge help.
Saturday: Cleaned out the fridge of everything we had and made tacos as well since I had some leftover hamburger meat.
Sunday: Chicken legs with mashed potatoes, leftovers of the taco night, salad, and fresh strawberries rounded out our meal.
