Finally spring has arrived! I hope you had a great holiday weekend and were able to enjoy family time and beautiful weather. This week the kids are wrapping up Spring Break and we’re excited to add spring menu items to our rotating menu plan.
Ready to start meal planning?
Monday: Perfect Chicken
A simple meal of chicken breasts cooked to perfection, spinach salad, and roasted potatoes will be welcome on a busy night.
Waffles, bacon, fruit smoothies, and a fresh strawberry salad on the side (have to add these to the plate a ton at this time of year since they’re so fresh!).
Wednesday: Taco Night
Steak is a family favorite. We’ll cook the steak with a balsamic glaze over high heat for a nice crispy outside to a medium-pink in the middle. Sides will include spinach and strawberry salad with walnuts and more of that balsamic with some olive oil, and fresh asparagus.
Friday: Pizza and Pasta
It’s been forever since we’ve had pasta, so I think this week we’ll mix it up and have an Italian-style feast with homemade pizza (gluten-free and dairy-free for me), salad, an antipasto platter, and pasta with homemade sauce.
Saturday: Clean out the Fridge Night
Each week we reserve a day to ‘clean out the fridge’ to help reduce our food waste and eat up leftovers. It’s always a hodge podge of food, but it’s kind of fun.
Sunday: Burger Night
Burgers made with organic beef, stuffed with carmelized onions and BBQ sauce for the adults, a ton of sides to choose from, a leafy green side salad, and fruit slushies (made with just fruit) for dessert.
