Since Easter Sunday is this weekend I thought I would share my Easter menu in addition to this week’s meal plan. If you don’t celebrate Easter this also makes a simple and laid-back Spring menu for entertaining. (said in my best House Hunters voice)
We’ll be celebrating at home this year-just us-since my husband also has to be available for a shipping pickup for the robotics club and it’s likely they will tinker and pack up the team’s robots. To keep it simple and make cleanup simple is the goal for me, though you could easily add a few more dishes if you’re hosting a bigger gathering.
With holidays we tend to eat early in the day (like 3-4pm) and snack instead of lunch so we end up eating all day. Isn’t that the point of holidays? 😉
Gluten- Free Easter Sunday Menu
Nuts, dried fruit, cheeses, fig spread, salami, olives. Carrots, cucumbers and hummus. Crackers (both gluten free and wheat crackers).
Gluten free rolls with butter (of course)
Fruit parfaits (fresh fruit with a ‘sauce’ of lemon and honey with layers of whipped cream between)
Buttered green beans
Mashed and roasted potatoes
Rack of Lamb
Prepared ham (I get a small one and simply heat it up)
Gluten free carrot cake
