It’s a short week for me this week on the menu plan since I’m heading out of town on Friday for a birthday trip! July 21st is my big day. 😉 But we still have a week of meals to make before my long-awaited getaway so let me get down to business.
Monday: Waffles and bacon. Fruit smoothies on the side. These blueberry smoothies are delicious and so simple.
Tuesday: Tangy honey chicken, watermelon arugula salad, roasted potatoes.
Wednesday: Stir fry night. I love all the veggies on top of more veggies! It’s so delicious with all the great seasonal produce we have during the summer.
Thursday: Taco night! My favorite since it’s so simple. Roasted peppers, my taco beef recipe, and my easy guac.
Friday-Sunday: I’m out of town! The family will be on their own which is fine since my husband has been handling meals on his own anyhow. I’ll be dining out a lot, but I’m going to try to keep it mostly healthy with a few treats along the way.
