This week is the last week of school, so I’m milking my kid-free time this week with time spent reading a good book, napping, and movie watching. It’s nice to take a little me time before the crazy of the summertime hits. Though I am excited about the lack of early morning schedules, and no more packing lunches and scooting reluctant children out the door. 😉
You may see a trend in last week’s menu recap, and it’s one that continues throughout our summer. Often we end up eating loads of fresh produce, and skipping dinnertime for some light fare. It’s not as simple as making a meal for everyone, but when it’s hot sometimes cooking is the last thing we want to do!

June 3rd Meal Plan
Monday: Leftover night! Hot dogs, and chicken wings. I’ll also make a nice green salad, corn on the cob, and slice up some strawberries for sides.
Tuesday: Taco night!
Wednesday: Perfect chicken, kale chips (these are totally addictive!), and fruit salad.
Recipes: Perfect Chicken Breasts.
Thursday: Pancakes and sausage and a side of fruit salad.
Recipes: Organic pancake recipe.
Friday: Leftover night.
Saturday: Dinner at a friend’s house.
Sunday: Hot dog and burgers on the grill.
Last Week’s Recap
Monday: Taco night!
Quick, easy, and everyone loves it!
Tuesday: Perfect chicken, kale chips (these are totally addictive!), and fruit salad.
Kale chips are seriously addictive, but they were out of kale at the store, so we just had a regular salas. BOO.
Wednesday: Pancakes and bacon with a side of fruit salad.
We opted to skip cooking this evening since it was so, so hot out. I made a salad, and yanked out some leftovers. Everyone ate whatever they chose.
Thursday: Homemade chicken wings and super fries with a side salad.
Again, way too hot to cook. It felt like an oven even with our AC on full blast! We did another hodge podge meal.
Friday: Homemade pizzas and spinach salad.
Ok, are you sensing a trend here? We bought pizza for dinner.
Saturday: Clean out the fridge night.
See the no cooking above, and tack on an evening of running errands and we ended up getting takeout from our local Cosi.
Sunday: Shrimp, gluten-free pasta, and salad.
We purchased an inexpensive grill (despite not having a patio or deck yet!) and made grilled hot dogs. I also made yummy baked BBQ chicken wings that were gluten-free.
