It’s hard to believe it’s June already, and with it comes the end of our school year! The kids have just 4 1/2 days of school left. No, I’m not panicking about summer vacation-why do you ask? 😉 Seriously though, I think we’re all ready for a break, some unstructured time, and lots of outdoor time. I’ll share more about what we’re planning to do with our summer later this week.
In the meantime, here’s our menu plan for the week. The husband and I are splitting duties this week.
Ready to start meal planning, but don’t know where to start?
Waffles and bacon? Don’t mind if I do! Dinner is always better when it’s breakfast.
Tuesday: Stir Fry Night
Stir fry night is my favorite! We get to choose what goes in our custom-made stir fry, and I always choose ALL the veggies. Snow peas, broccoli, carrots, onions, and more. The must-have? A sprinkling of ginger and garlic. YUM.
Wednesday: Taco Night
We haven’t had taco night in awhile, so I’m excited to have taco Tuesday. I’ll serve up my easy guacamole and tons of veggies to top our tacos.
Thursday: Slow-cooked chicken
Guys, my husband made the BEST chicken ever the other week. I seriously think chicken is okay, it’s not my favorite but I eat it, but this chicken SO good. I’m going to grab some photos and share his recipe next week. We’ll add a side of gluten-free, dairy-free cornbread and a big green salad with apples and walnuts will make this a perfect meal before the last day of school.
Pizzas are so much fun to make at home and a great way to celebrate the end of the school year! We’ve been trying out different gluten-free doughs and the jury is still out. We have been pretty happy with this Cup 4 Cup pizza mix though it does contain milk. It seems okay for me (I don’t top it with cheese which seems to be the big culprit for me), but it’s not going to make a dairy-free pizza. We purchase it at our local GIANT for about $7.99. If you don’t need a gluten-free recipe you can always try our Whalen Family pizza dough recipe-it’s well-tested! Add a side salad and you’re set.
Saturday: Clean out the fridge night
We’ll work on cleaning out the fridge of all the leftovers and foods that need to be eaten up before they go bad. It’s a great way to reduce waste. Read about how we reduce food waste at home here.
Sunday: Pistachio-crusted Salmon
We have loved adding fish back to the menu regularly. This recipe from Nom Nom Paleo looks delicious. A combination of a few of our favorite things into one easy to make dish? Sign me up!
