It’s time for this week’s meal plan! It’s the middle of June already, and we have a busy week ahead. There’s still construction going on at home this week, and my oldest is having his wisdom teeth removed on Tuesday. I had it done as a teen and my husband was in his 20’s, so I know it won’t exactly be pleasant, but I’m hopeful his recovery will be smooth. We have plans to make lots of smoothies. 🙂
In addition, the younger kids are gearing up for a week of sleepaway camp! I’m not nervous or anything, why do you ask? 😉
As always we have a ton to do this week, so having a meal plan in place is going to be a huge help!

Monday: Clean Out The Fridge Night
We usually clean out the fridge on Saturday, but we didn’t have a on of leftovers this week thanks to summer vacation. So, we’ll be cleaning out the fridge today of all our weekend food. It’s a great way to reduce waste. Read about how we reduce food waste.
Waffles and bacon for dinner? Yes, please. Dinner is always better when it’s breakfast. A side of smoothies and it’s a healthy and delicious meal!
Wednesday: Cheesesteak Paninis
We’re from Philly so cheesesteaks are kind of our thing. My husband learned to make a great cheesesteak in college as a cook. He’s combined cheesesteaks with his new favorite tool in the kitchen-his panini press. He puts the steak (and cheese if someone wants it) in between naan or gluten-free sliced bread for us and serves it up with a side of fries and a giant green salad.
It’s summer, so burgers are on the menu more often since they’re a great summer food. After a long day of yard work, running around outside, and work we’re all a lot hungry. Served with a side of corn on the cob, watermelon, and a green salad.
Pizzas are so much fun to make at home and a great way to celebrate the end of the school year! We’ve been trying out different gluten-free doughs and the jury is still out. We have been pretty happy with this Cup 4 Cup pizza mix though it does contain milk. It seems okay for me (I don’t top it with cheese which seems to be the big culprit for me), but it’s not going to make a dairy-free pizza. We purchase it at our local GIANT for about $7.99. If you don’t need a gluten-free recipe you can always try our Whalen Family pizza dough recipe-it’s well-tested! Add a side salad and you’re set.
Saturday: Stir Fry Night
Stir fry night is the best. Bob custom makes everyone’s stir fry for them. The kids are a little picky so this works out well for us. Besides no one wants ALL the veggies like I do (the kids like to eat them raw on the side). This week we have carrots, snow peas, onions, and peppers.
Sunday: Slow-cooked chicken
This is the best. We’re working on perfecting the recipe, and will share it soon! Served with a side of corn on the cob, a big green salad, and cornbread is perfect.
