Last week I started coaching my son’s STRIDE program twice a week, so meal planning has become even more of a joint effort. STRIDE is a program that encourages character development in young boys (grades 3-5 in our case) through running and a program that involves weekly lessons, games, and more. If you are familiar with Girls on the Run it’s somewhat similar. It’s been really fun to be a coach again, and get to know the boys on our team-they’re a great group.
In any case while my husband has been manning meal duty more frequently thanks to our efforts to eat healthier (and me having to keep off my foot a lot) those two nights a week are definitely all his now. While our household roles are pretty fluid and we share most of the work this is the first time in a while where I have a set schedule that interferes with dinnertime prep.

Waffles, bacon, fruit smoothies. My 11 year old got a waffle maker for her birthday so I see a lot of waffles in our future!
Tuesday: Perfect Chicken
A simple meal of chicken breasts cooked to perfection, spinach salad, and roasted potatoes will be welcome on a busy night.
Wednesday: Taco Night
Thursday: Hamburgers and bacon-wrapped onion rings
Bob makes these incredible stuffed hamburgers and one of my favorite things of late-BBQ bacon wrapped onion rings. They sound like they’re incredibly horrible for you, but in fact they aren’t so bad! It’s just one strip of bacon, an onion ring, and some seasoning. Plus they’re delicious.
Friday: Pizza and Pasta
It’s been forever since we’ve had pasta, so I think this week we’ll mix it up and have an Italian-style feast with homemade pizza (gluten-free and dairy-free for me), salad, an antipasto platter, and pasta with homemade sauce.
Saturday: Clean out the Fridge Night
Each week we reserve a day to ‘clean out the fridge’ to help reduce our food waste and eat up leftovers. It’s always a hodge podge of food, but it’s kind of fun.
Chicken wings, roasted potatoes, salad, and cornbread muffins.
