I’m back from 5 days in Atlanta at the amazing Mom 2.0 Conference (more on that soon I promise!) and back to mountains of laundry, puppy fur on everything, and of course meal planning. AH! It’s good to be home.
Taco night! Taco beef, tortillas or tortilla chips, shredded cheese, shredded lettuce, salsa, and easy guacamole.
Perfect roast chicken, this amazing sweet potato recipe (I skip the prosciutto), salad, and peas.
Spanish chicken and rice, side salad, sliced mangos. This dish is a great way to use up leftover cooked chicken and will make for a quick meal on a night that’s busy.
Thursday: (Aidan’s night)
BRINNER (breakfast for dinner): our favorite pancakes, bacon, sausage links, and loads of fruit.
Clean out the fridge night.
Pizza night! Homemade pizza.
Baked lime tilapia, rice, steamed broccoli, and salad.
