Menu Plan Monday, well Tuesday

Ok, it’s Tuesday, but I still had a menu plan ready yesterday, just didn’t have time to post it until now.

This week’s menu will be simple, since the kids had yesterday off, and today is an “ice” day, and I’ve heard a nasty rumor they may be off again on Friday! Working from home with kids at home isn’t exactly easy after they’ve been home for the 5th day in a row!

I’m also battling a sinus infection this week, so I’m planning to make things as simple as possible.

Menu Plan

Monday: Brinner! The kids love brinner (breakfast for dinner). They had french toast, bacon and sausage with a healthy side of fruit.

Tuesday: Pot roast with potatoes and onions, side of green beans and salad

Wednesday: Pasta and various leftovers, salad, fruit on the side

Thursday: Broiled fish, broccoli, rice, salad

Friday: Appetizer night! Planning a game night, so we’ll have finger foods for dinner.

Saturday: Leftovers

Sunday: Roast chicken, sweet potatoes, and cranberry and pear salad

    I don’t know why I have never thought of Brinner. Brinner would be awesome some nights and less stressful.
