Guys. It’s only a bit more than two weeks until Christmas AND today is my oldest’s birthday. There’s a lot of to dos on my plate between work, home, and holidays. Meal planning will take some of the stress off though!
My husband has been working hard to eat healthier which I’m incredibly grateful for because it’s made my routine easier with a partner, and he’s been trying all kinds of new recipes that are healthy. A few nights a week he cooks dinner, and while I’m not a fan of doing the dishes I much prefer it to cooking and cleaning up. 😉
He introduced me to Yummly where he’s been hunting down new recipes. It’s been fun to try new things, figure out what everyone likes and doesn’t, and focus on our health as a family.
Somehow during the holiday season we’re still losing weight and feeling better than ever! While I’ve included some standbys below, I am also sharing a few things we’ll try out this week.

Monday: My oldest baby (I use that term very loosely since he’s taller than me!) is turning 17 today! He gets his choice for dinner which means Five Guys burgers and fries. My husband and I will eat something else (most likely turkey leftover from last night’s dinner) though I admit I’ll snag a small serving of fries.
Tuesday: Smoked paprika chicken, roasted baby potatoes, side salad.
Wednesday: Taco night with my super simple guacamole recipe, taco beef, and toppings (lettuce, tomatoes, salsa, onions, shredded cheese, etc.)
Thursday: Brinner! Pancakes, (made with almond milk, gluten-free flour, and pastured eggs), bacon, sausage, and fruit salad.
Friday: Pizza night. I’m going to try this quinoa crust!
Saturday: Clean out the fridge night.
