Avocados are one of my favorite foods. They are full of healthy fat, low in calories, and have plenty of vitamins and minerals. Since they are good for me, and I love them, they are a big part of my weekly diet.
Avocados are a versatile fruit, can be eaten alone, or used in a variety of recipes. On sandwiches, as a dressing, or even as a condiment.
Fun Avocado Facts:
- Avocados are a fruit.
- Avocados are great for your outsides too! They make a great facial mask and moisturizer.
- Avocados are a ‘nutrient booster’ that help you absorb nutrients from other foods.
- Avocado is perfect for baby’s first food.
- Avocados are heart healthy, aid digestion, and can even help lower cholesterol levels.
- Avocados from Mexico are available year-round!
Whether it’s easy guacamole or just some sliced avocado on top of a salad, burger, or chicken I try to add them in easy and creative ways whenever possible.
When Amazing Avocado asked me to make a recipe, I knew I need to try something a little more unusual. I had a dessert in mind, but I couldn’t find the recipe I had used previously anywhere, so I did a little googling, a little messing around in the kitchen, and came up with this DELICIOUS raw, vegan, no-bake choco-banana avocado pie!

I was lucky enough to get together with a group of local Philadelphia-area bloggers (and friends) to share and taste or recipes. {links to their recipes coming soon}
We had a little too much fun. Just look at this Vine video we made!
Hilary (My Scraps) made delicious watermelon avocado kabobs. They were simple, gorgeous, and tasty to boot!
Sarah (Genesis Moments) made breakfast smoothies that were divine. I’ve started making more smoothies since we have warmer weather, and the avocado adds a lovely creamy texture to the smoothies. Here we are trying the smoothies!
Stephanie (Confessions of a Stay-at-Home Mom) made a cilantro avocado dressing that I adore! It would be perfect over tacos.
Julie (Julieverse) made a dessert too, Easy as ABC pie, with avocado and lime. It was a cross between key lime and avocado pie. I could have eaten it all day long.

I love avocado! I love it as a spread on sandwiches and wraps, on salads, and, of course, as guacamole or as an addition to salsa fresca.
Like avocado on fish tacos
I have a yummy but easy recipe for an avocado salad. It uses lettuce, (1) avocado, (1 c.) corn and (1) tomato. I use a simple lime dressing on it.
We love chilled Avocado Soup! The one we make is from my Mary Hart cookbook and is so easy! Its just 3 avocados, 1 1/2 c chicken broth, 1 1/2 cup light cream, 1 1/2 teaspoon salt, 1/4 teaspoon onion salt, 1/8 teaspoon white pepper, and 2 teaspoons lemon juice! Puree avocados with chicken broth and then mix in cream and seasonings! You should chill for at least two hours….we sometimes make the night before for our family get togethers! Add the lemon juice just before serving! It tastes so good during the summer!!!!

grill sliced avocado drizzled in EVOO and salt and pepper about 3 minutes on both sides it is a wonderful summer side!
I love avocado chopped up in salads, and as a topping for sandwiches!
I made the chocolate banana avocado filling and served it as pudding to my boys. The same boys who turned their noses up at the sight of avocados. Delicious! They are huge fans! I might try freezing as “pudding pops”. Thanks for the great recipe!
I love to mix avocado and make tuna salad..much healthier alternative to mayo!
I love a simple salad of chopped tomatoes, diced avocado and baby spinach tossed with lemon juice, olive oil, salt and pepper. 🙂
I eat an avocado with my salad every day! and there’s a killer dairy/gluten free chocolate pudding made from avocados!
Best salad dressing ever: avocado blended with lemon, garlic, parsley, and olive oil. It’s green goddess minus the mayo!
I’m just eating it as guacamole. I want to try it as sandwich dressing. Perhaps dress up a turkey sandwich.
I love grilled shrimp tacos topped with fresh avocado slices! Delish!

Avocados are my favorite! I like to cut them up and mix them with salsa. Instead of using chips to scoop it up, I just crumble a couple on top and use a spoon instead!
I make garlicy guac ~ 2 hass avocados then squeeze 1 lime over them, add 2 cloves of minced garlic, diced red onion (eye ball), a small plum tomato (seeded then diced, but eyeball, you don’t want too much), 1 minced jalapeno (use all of it) and a splash of habanero sauce. Take a fork and mush, leave it chunky or keep going to your desired consistency.
I love avocado in cobb salad!
Oh my. I don’t even know where to start 🙂 I’ve mentioned before that I love the avocado. My favorite dish to prepare that involves avocado is probably ceviche.
In the summer, I keep frozen, ripe, chopped bananas in the freezer as often as I can so that when the mood strikes and I have ripe avocados, I blend the two together making something akin to ice cream. Add chocolate chips, bits of cherry, or tapioca balls boiled with brown sugar, for even more fun 🙂
I like these recipe with avocados: http://www.singerskitchen.com/2010/01/quick-chocolate-mousse-tarts.html and http://www.singerskitchen.com/2010/02/salvadoran-cuisine-pupusas-with.html
Here’s the recipe for my favorite avocado dish! First, I make home-made guacamole with several smashed avocados,1 small chopped onion, lemon juice, and salt and pepper to taste.
I put a large pile of guacamole in the center of each dinner plate I surround that with a ring of shredded cheese. Next comes a ring of chopped cooked chicken. Next comes a ring of chopped tomato. Last in a ring of chopped lettuce to the outer edge of the plate. Garnish with a sprinkle of chopped red onion, salsa, and several slices of avocado, Enjoy!
I like guacamole mixed in with my deviled egg filling.
I just love avocados in guacamole and on top of burritos. I sometimes add tomatoes and onions in the guacamole for a little different taste too.
