I am so excited to finally see some 60 degree days in our future! This winter has dragged on and on….and on!
This week the kids have a partial week since their Spring Break starts on Wednesday. Their break is only 5 days, and since we traveled in January to escape the cold we won’t be doing any family travel. I also have a pretty heavy workload at the moment-no thanks to all my sick days in March.
Thankfully my parents are eager to spend some quality time with the kids, so we’re shipping them off to ‘Grandparents Camp’ for a few days. I’m looking forward to uninterrupted work time and some a few dates with the husband. It’s much-needed after a crazy few months!
In any case or menu is a little changed this week because of our schedule. We tend to be a little more relaxed during school vacations, and this week will be no exception since I’m sure the grandparents will spoil them with sweets!
Spring Break Menu Plan
What’s better than waffles and bacon? Waffles topped with bacon! 😉 We’re still working on perfecting our gluten-free waffle recipe, so I’ll be sure to share when I find the right combo. We even tried a mix last week and it was sooo heavy. We’ll serve up a strawberry banana coconut cooler on the side.
Tuesday: Chicken Wings
These honey barbecue chicken wings are so dang good! They make a great meal and aren’t fried or loaded down with salt-so they’re fairly healthy. Served with a side of homemade fries and salad these will be a great meal for a busy night.
Wednesday: Eat Out
Between packing up the kids and dropping them off we’ll find somewhere to nosh on the way.
Thursday: Fish Tacos
We’ve made this once before. While the kids were split on them we both loved them, so they’ll make a reappearance on the menu while the kids are out-of-town.
Friday: Pizza Night
Pizza is one of our favorites. While it doesn’t always seem healthy it can be a great meal. I load my pizza up with dark greens, herbs, olives, and more healthy veggies and serve it with a side salad. Find our homemade pizza dough recipe here (I’m still working on a gluten-free version.)
It’s clean out the fridge night-even though the kids aren’t home. We’ll nosh on a variety of foods to make sure nothing goes to waste. My latest favorite? Adding greens and fruit to the blender for a tasty green drink.
Sunday: Easter Sunday
Easter requires a special Easter menu. Since it’s just me and my husband this Easter it will likely be a scaled down version of this previously shared menu.
