It’s Monday again, time for another update on our 365 day meal plan and this week’s menu.
Last week was pretty successful despite the still nasty cold/congestion that is running through the house and a busy, busy week.
For my own record-keeping and to keep me honest here’s last week’s menu and some commentary so I can share thoughts and updates to the menu.
Week Two Menu Recap
Monday: Key-West style baked grouper, Brown Rice, Salad, Fruit Salad
This was really divine. One of the kids ‘hates fish’ but still ate it due to our two bite rule. Another one was a convert after he coated his fish with so much ketchup I’m doubtful he tasted any of the grouper.
Tuesday: Burgers and hot dogs, salad, chips or homemade frugal fries, pickles
We switched this up because the store was out of hamburger meat and I wasn’t feeling well enough for a run to the grocery store. Instead we had the gluten-free pasta meal meant for Wednesday.
Wednesday: Gluten-free pasta, broccoli, garlic bread, cheese & sauce, salad
Wednesday night the hubby and I ended up going out to dinner to say goodbye to his co-worker that is leaving. The kids (and their sitter-hi Mom!) had takeout from Cosi to simplify things while we were out for the night.
Thursday: Cider glazed pork loin, gluten-free corn bread, salad, honey glazed carrots
Subbed in green beans instead. I actually made up a different recipe I’ll share shortly.
Friday: Pizza night, garlic bread, salad
We actually (gasp!) ordered pizza from a local pizza shop since I didn’t have all the ingredients I needed for gluten-free pizza and I had no time to shop. Ironically the pizza shop messed up our order, so we ended up getting another order made at no cost and they refunded us for half our order. In the end it was cheaper than me trying to bake them at home.
Saturday: Clean out the fridge night
Always an odd and fun night with pairings like pizza and rice.
Sunday: Stir Fry night (shrimp, steak, veggies) with rice and salad
Since I’m clearly ‘schedule blind’ I forgot this was during a time two of the kiddos would be at a birthday party. Instead I marinated a roast, and hubby cooked it so by the time I got home dinner was ready. The birthday party kids opted out since they had pizza, and the recipe was only so-so, but it was nice to have dinner done relatively hassle-free.
Week Three Menu: Week of January 23
Now onto this week’s menu which has some slight adjustments due to finding sale prices at the grocery store, and a little juggling of schedules.
Monday: Stir Fry night with shrimp and veggies, rice on the side.
Tuesday: Bone-in chicken breasts, twice baked potatoes, salad with pears and cranberries.
Wednesday: “Mix Night” nacho chips, tacos, tortillas, taco beef, leftover chicken, and lots of sides
Thursday: Sausage, gluten-free pasta, salad, peppers and onions
Friday: Pizza night (this time homemade!)
Saturday: Clean out the Fridge Night
Sunday: Rack of lamb, spinach salad, roasted potatoes
