I’m trying to get back on the wagon with meal planning. Lately our lives have been kind of upside down with work, kid’s activities, freaky snowstorms, and renovations (more on that soon).
This week is pretty straightforward. I’ll be out of town Thursday and Friday (YAY for eating uninterrupted!), and we generally eat out on Saturdays or have a clean-out-the-fridge meal.
Monday: Baked organic chicken (bone-in), roasted potatoes (maybe these garlic/bacon/parm potatoes from Savor the Thyme), salad with pears and cranberries.
Tuesday: Whole wheat pasta with sauce and toppings, garlic broccolini, and salad for the kids. I’ll make an egg/broccolini bake for myself (and for lunches or breakfasts this week).
Wednesday: Taco night with my ground beef recipe and all the fixins’.
Thursday: Dinner in Atlanta with Home Depot!
Friday: Airport snacks and a late night meal at home (preferably with wine).
Saturday: Eating out or cleaning out the fridge.
Sunday: Crock pot meal-not sure what yet. We always have a busy Sunday with grocery shopping, some work time, and some housework so a crock pot meal only makes sense.

We also love pork tacos- just dump green salsa and pork (roast or boneless chops) into the crock post and a few hours later you have taco filling!
Yummy! I never thought about making taco filling in the crock pot! Great idea.
I love my crock pot and use it at least twice a week.

The menu sounds yummy! We’re big fans of roasted potatoes here, though the kids insist on having ketchup with theirs.

I love to make pulled chicken in my crockpot. (You could do this with pork, too, but we keep kosher).
